Grandma K's Feel Better Tea

  • 1 tbsp Grandma K's Honey

  • 1 Small piece fresh ginger root sliced

  • 1/4 tsp Tumeric (fresh sliced or powdered)

  • 1/2 Lemon squeezed juice

  • 2 Cinnamon sticks (or tsp of cinnamon powder)

  • 1 Echinacea tea bag (optional)

  • 300 mL Hot water

Sweet Honey Scones

Level: Easy to Medium (easy baking with simple natural ingredients)

Ingredients

  • 2 cups all-purpose flour

  • 1/4 cup granulated sugar 

  • 1 tablespoon baking powder 

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter (Cold and cut into small cubes) 

  • 1/2 cup heavy cream (An additional tablespoon for brushing) 

  • 1/4 cup Grandma K's Honey 

  • 1 large egg 

  • 1 teaspoon vanilla extract 

Directions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix dry ingredients: In a large bowl, combine the flour, sugar, baking powder, and salt.

Cut in the butter: Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs. (Don't over mix) 

Add wet ingredients: In a separate bowl, whisk together the heavy cream, Grandma K's honey, egg, and vanilla extract. Pour this into the flour mixture and stir gently until it forms a dough.

Shape the dough: Turn the dough out onto a lightly floured surface. Pat the dough into a circle about 1-inch thick. Cut it into 8 wedges using a sharp knife or a pizza cutter. (Optional: Place in freezer for 10 minutes to encourage a light and fluffy scone)

Bake: Place the scones on the prepared baking sheet. Brush the tops with a little extra cream for a golden finish. Bake for 12–15 minutes or until the scones are golden brown.

Serve: Allow the scones to cool slightly before serving. Drizzle extra Grandma K's honey over them for added sweetness.
